L&#8217;errore pi\u00f9 comune \u00e8 inserire vini secondo il proprio gusto personale senza tenere conto del tipo di clientela che si ha o si vuole avere. In effetti una delle prime cause della chiusura di un ristorante \u00e8 l&#8217;ego dei titolari che creano un piccolo tempio a cui immolare i loro stessi soldi in quanto gli unici che effettivamente compiono sacrifici sono proprio loro. Il secondo errore pi\u00f9 comune \u00e8 guardare solo il prezzo e quanto si pu\u00f2 guadagnare dalla singola bottiglia senza ragionare in prospettiva. Per questo consiglio sempre di frequentare queste piccole <strong>Masterclass<\/strong> organizzate in occasione di manifestazioni come la <strong>Milano Wine Week<\/strong>: forniscono soprattutto degli spunti di riflessione e confronto con chi il vino lo distribuisce&#8230; come ad esempio <strong>Partesa<\/strong>.<\/span><\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=&#8221;4.6.6&#8243; _module_preset=&#8221;default&#8221;]<\/p>\n<p style=\"text-align: justify;\"><span><strong>Partesa<\/strong> \u00e8 un distributore di beverage del <strong>gruppo Heineken Italia<\/strong> fondato nel 1989 che si occupa anche di <strong>distribuzione vini<\/strong> con circa 40 cantine in esclusiva. Alla Milano Wine Week ha organizzato 2 Masterclass nella giornata di gioved\u00ec 8 ottobre, una in particolare dedicata ai vini esteri a cui mi ha fatto piacere partecipare. I vini in degustazione erano:<\/span><\/p>\n<ul>\n<li style=\"text-align: justify;\"><span>Champagne Grande Sendr\u00e9e 2009, Drappier<\/span><\/li>\n<li style=\"text-align: justify;\"><span>Sancerre Blanc &#8220;Les Chasseignes&#8221; 2018, Raimbault<\/span><\/li>\n<li style=\"text-align: justify;\"><strong>Herreletten Riesling Alte Reben 2017, Weegm<em>\u00fc<\/em>ller<\/strong><\/li>\n<li style=\"text-align: justify;\"><strong>Chablis Vieilles Vignes 2018, Hamelin<\/strong><\/li>\n<li style=\"text-align: justify;\"><span>Chablis 1er Cru Beauroy 2017, Hamelin<\/span><\/li>\n<li style=\"text-align: justify;\"><strong>Chassagne Montrachet Abbaye de Morgeot 2017, Leroux<\/strong><\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Se sei abituato a leggere quello che pubblico sai che ho un debole per questo genere di vini quindi non potevo proprio perdermi questa degustazione!\u00a0<span>\ud83e\udd29<\/span><\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=&#8221;4.6.6&#8243; _module_preset=&#8221;default&#8221;]<\/p>\n<p style=\"text-align: justify;\"><span>Ti ho promesso per\u00f2 di suggerirti 3 vini che dovresti aggiungere alla carta del tuo ristorante se sei un operatore del settore, ma anche che dovresti scegliere quando vai al ristorante se sei un winelovers! Il perlage \u00e8 fine, non particolarmente numeroso e persistente. Al naso presenta note evolute di burro e pasticceria con un finale piacevole di frutta esotica. In bocca \u00e8 croccante, fresco, coerente, piuttosto sapido e lungo sul finale.<\/p>\n<p style=\"text-align: justify;\">Non \u00e8 male, ma non ha un rapporto qualit\u00e0-prezzo convincente. La bolla in particolare la giustifico in un 2009 e in generale ha note troppo evolute in rapporto all&#8217;annata. Al naso \u00e8 intenso e particolare con note di t\u00e8 bianco, fiori di castagno, cedro candito, incenso e una leggera riduzione. In bocca convince di pi\u00f9 con una grande spalla acida, freschissimo, molto sapido e intenso. Coerente nel gusto, si arricchisce di note vanigliate e spremuta di arancia rossa. Elegante e con un lungo finale.<\/p>\n<p style=\"text-align: justify;\">Altro vino che mi \u00e8 piaciuto moltissimo, ma che ho un debole per il Sauvignon gi\u00e0 lo sai! Forse forse i vini che ti consiglio sono 4 e non 3&#8230; perch\u00e8 anche questo merita davvero! Viene elaborato da vecchie vigne che affondano le loro radici su suoli calcarei. Al naso \u00e8 caratteristico di questa tipologia di giovani riesling con note intense di pompelmo rosa, fiori di tarassaco, ananas e un leggero idrocarburo. in bocca \u00e8 coerente, grasso, freschissimo e sapido con un finale agrumato piuttosto lungo. Il residuo zuccherino viene stemprato dalla grande acidit\u00e0.<\/p>\n<p style=\"text-align: justify;\">La famiglia nobile dei Weegm\u00fcller, originaria di Zurigo, si \u00e8 trasferita nella splendida Valle del Reno intorno al 1657 per produrre vino. Al naso \u00e8 intenso e spettacolare, emozionante! Note di fiori bianchi, pane tostato imburrato e nocciola si intrecciano al mandarino candito per sfumare in un accento minerale, iodato. In bocca \u00e8 coerente, grasso, morbido, elegante, fine e speziato. Ha un finale morbido e tostato piuttosto lungo.<\/p>\n<p style=\"text-align: justify;\">Siamo in Borgogna, le uve di chardonnay provengono da un vigneto di oltre 70 anni che affondano le loro radici in un terreno calcareo. Al naso \u00e8 burroso, erbaceo con una nota di salsedine e un finale di cioccolato bianco. In bocca \u00e8 coerente, freschissimo, elegante, piuttosto sapido e con un grande potenziale di invecchiamento. Lungo finale agrumato.<\/p>\n<p style=\"text-align: justify;\">Pi\u00f9 chiuso del precedente, lo consiglio solo se si ha la pazienza di aspettare qualche anno affinch\u00e8 esprima tutte le sue potenzialit\u00e0. Per un ristorante che non vuole tenere un capitale immobilizzato nella sua cantina \u00e8 preferibile comprare il precedente: costa meno e si fa pi\u00f9 bella figura col cliente finale. Al naso \u00e8 pazzesco, pazzesco, ancora pazzesco: un orgasmo. Elegante e intenso, fine e con note affumicate di legno di cedro, sigaro del Nicaragua vintage 1997, burro di arachidi, pesca gialla. In bocca \u00e8 coerente, freschissimo, elegante, emozionante. Lungo finale affumicato.<\/p>\n<p style=\"text-align: justify;\">Compralo, ordinalo, rubalo quando nessuno ti guarda&#8230; no, ecco questo magari no!\u00a0<span>\ud83d\ude06 Benedetta Borgogna, con lo chardonnay non ti batte nessuno. Crea dipendenza, e non \u00e8 proprio una bottiglia da 2 soldi. Ma ti assicuro che sono soldi spesi non bene, benissimo! Benjamin Leroux ha mezzo ettaro in questa meravigliosa Premier Cru di Morgeot e le sue vecchie vigne di oltre 70 anni di et\u00e0 affondano le loro radici in un terreno calcareo con una piccola parte di argilla.<\/span><\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row column_structure=&#8221;2_5,3_5&#8243; Ne ho degustate praticamente tutte le annate ed \u00e8 un vino che non si smentisce mai, soprattutto con i crudi di pesce e crostacei che adoro. La prima volta che l&#8217;ho assaggiato \u00e8 stato in uno dei miei ristoranti preferiti in assoluto: <strong>Tentazioni Ristorante a Costa Volpino (BG)<\/strong>. Prova le crudit\u00e9 di <strong>Sandro Pittelli<\/strong> con questo Riesling (in carta esce sotto le 30\u20ac) e scrivimi per ringraziarmi!<\/p>\n<p style=\"text-align: justify;\">Il secondo vino che ti consiglio \u00e8 lo\u00a0<strong>Chablis Vieilles Vignes 2018, Hamelin <\/strong>perch\u00e8 ha un ottimo rapporto qualit\u00e0 prezzo, \u00e8 buonissimo e gi\u00e0 pronto da bere. Certo pu\u00f2 evolvere molto in bottiglia, ma anche ora fa la sua meravigliosa figura! Si abbina benissimo a carpacci di pesce di lago e di mare o frutti di mare crudi o in saut\u00e9.<\/p>\n<p style=\"text-align: justify;\">Il terzo vino \u00e8 lo\u00a0<span>Chassagne Montrachet Abbaye de Morgeot 2017, Benjamin Leroux che \u00e8 spettacolare, incredibile, indimenticabile.
