Qualche volta si parla di quale vino italiano abbinare alla cucina cinese&#8230; ma \u00e8 ancora piuttosto raro in quanto la nostra consapevolezza di questa straordinaria cucina \u00e8 stata ampiamente rovinata dal cibo low cost occidentalizzato che ha colonizzato il mondo.<\/p>\n<h2 style=\"text-align: left;\">Vino cinese: un po&#8217; di storia<\/h2>\n<p class=\"p1\"><span class=\"s1\">La storia della viticoltura in Cina ha radici lontanissime: le prime tracce di bevande fermentate utilizzate nel rito funerario risalgono al 5.000 a.C. Altri vasi in ceramica risalgono addirittura all&#8217;8.000 a.C. e contenevano una forma &#8220;rudimentale&#8221; di vino ottenuto da uva, biancospino e riso con un tenore alcolico intorno ai 10 %vol. Sia chiaro che l&#8217;uva utilizzata quasi 10.000 anni fa non proveniva dalla viticoltura, ancora assente, ma piuttosto dalla raccolta dei frutti delle viti selvatiche autoctone. Le prime coltivazioni di vite documentate sono legate a barbatelle portate dall&#8217;Uzbekistan dal generale Chang Chien durante la dinastia Han intorno al 130 a.C., mentre le prime notizie riguardanti un sistema di vinificazione simile a quello dei paesi occidentali risalgono al VII secolo d.C.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Durante la lunghissima dinastia Quing (1644-1912) la viticoltura fu come fossilizzata all&#8217;ambito familiare.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Oltre alla variet\u00e0 della Vitis vinifera \u00e8 molto diffusa la coltivazione di due vigneti autoctoni inadatti alla produzione di vini di qualit\u00e0: Vitis amurensis e Vitis thunbergii. I primi tentativi di vinificare uve occidentali per produrre vini in stile europeo risalgono alla fine del XIX secolo, quando il console cinese &#8211; un businessman colto con grandi possibilit\u00e0 economiche &#8211;\u00a0<strong>Cheong Fatt Tze<\/strong> (conosciuto anche come\u00a0<strong>Zhang Bishi<\/strong>) fond\u00f2 (nel 1892) Chang Yu Winery nello Shandong e fece impiantare una tipologia di riesling con la consulenza di un enologo austriaco. Egli aveva viaggiato moltissimo e aveva comprato migliaia di barbatelle prima negli Stati Uniti e poi in Europa, ma pochissime di queste viti erano sopravvissute alle condizioni pedoclimatiche cinesi. Cos\u00ec, per salvare l&#8217;azienda, prov\u00f2 a innestare le viti straniere su piedi di viti autoctone della Cina Settentrionale con ottimi risultati.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Lo sviluppo della vitivinicoltura poi si blocc\u00f2 nel 1949 in seguito alla nazionalizzazione di tutte le cantine. L&#8217;obiettivo divent\u00f2 quello di aumentare la produzione a discapito della qualit\u00e0 e nacquero vini dolci e sciropposi spesso ottenuti dalla miscela di fermentati d&#8217;uva ed altre materie prime.
