Champagne significa campagne dove si pratica l&#8217;agricoltura e non c&#8217;entra nulla con la famosa zona dove si produce lo Champagne. In questa zona si ottengono distillati molto aromatici leggeri ed eleganti, pi\u00f9 floreali nel Grande Champagne, pi\u00f9 fruttati nel Petite Champagne.<\/p>\n<p style=\"text-align: justify;\">I vigneti pi\u00f9 impiegati sono a bacca bianca, soprattutto l&#8217;ugni blanc (il trebbiano, 90 %), con piccole percentuali di folle blanche e colombard (da qui vini leggeri con acidit\u00e0 elevata). Il tipico alambicco Charentais in rame \u00e8 impiegato per la doppia distillazione, che consente di ottenere un&#8217;acquavite particolarmente pura e di grande finezza. Oltre ad essere molto resistente ed ottimo conduttore di calore, il rame fissa gli acidi grassi che si sviluppano durante il riscaldamento a fiamma diretta e che potrebbero dare gusti sgradevoli.<\/p>\n<p><script async=\"\" src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block; text-align: center;\" data-ad-layout=\"in-article\" data-ad-format=\"fluid\" data-ad-client=\"ca-pub-2294603368235139\" data-ad-slot=\"6703038172\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h3 style=\"text-align: center;\">Cognac: La Distillazione<\/h3>\n<p style=\"text-align: justify;\">La curcubita (caldaia) ha la tipica forma di una cipolla e una capacit\u00e0 massima di 30 hl anche se il volume di riempimento \u00e8 limitato a 25 hl, \u00e8 sormontata da un capitello (elmo) detto &#8220;testa di moro&#8221;. Da questo capitello parte il tubo con collo a cigno che progressivamente si stringe e termina in un condensatore a spirale o serpentina immerso in un bagno refrigerante. A volte \u00e8 previsto anche uno scaldavino in cui il liquido da distillare subisce un preriscaldamento. Da qui passa alla caldaia nella quale si liberano solo le sostanze pi\u00f9 volatili che raggiungono il collo del cigno e la serpentina e si condensano a contatto col refrigerante.<\/p>\n<p style=\"text-align: justify;\"><strong>1\u00b0 DISTILLAZIONE A 95-100\u00b0 per 8-10 ore<\/strong>: si ottiene il Brullis, un liquido lattiginoso con solo il 24-30 % di alcol etilico.<\/p>\n<p style=\"text-align: justify;\"><strong>2\u00b0 DISTILLAZIONE A 95-100\u00b0 per 12\u00a0ore<\/strong>: si scartano le teste e le code tenendo solo il prezioso cuore, chiaro ed aromatico, con un tenore alcolico di 65-72 %.<\/p>\n<p style=\"text-align: justify;\">Il Cognac ha un tenore alcolico che deve essere per legge di almeno il 40 % del volume e si ottiene con un taglio realizzato direttamente in barrique con acqua demineralizzata.<\/p>\n<p style=\"text-align: justify;\">Il Cognac \u00e8 l&#8217;anima del vino poich\u00e9 da 1000 litri di vino base si ottengono circa 100 litri di distillato, in particolare 2 litri di teste, 36 litri di code e 62 litri di cuore. Quindi servono 1000 litri di vino base per avere 62 litri di Cognac.<\/p>\n<p><script async=\"\" src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block; text-align: center;\" data-ad-layout=\"in-article\" data-ad-format=\"fluid\" data-ad-client=\"ca-pub-2294603368235139\" data-ad-slot=\"6703038172\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h3 style=\"text-align: center;\">Cognac: Maturazione e Invecchiamento<\/h3>\n<p style=\"text-align: justify;\">Il giovane Cognac riposa a lungo, in legno, per arricchirsi, ammorbidirsi e raggiungere l&#8217;armonia. Il rovere \u00e8 ricavato dalle querce di 100-150 anni del Limousin, stagionato e lavorato a spacco. Le doghe sono assemblate senza l&#8217;uso di colla n\u00e9 chiodi e le botti hanno una capacit\u00e0 variabile di circa 350 litri. Durante l&#8217;invecchiamento c&#8217;\u00e8 un aumento fino a 4 volte degli acidi presenti, 2-3 volte degli esteri, 5-10 volte delle aldeidi, mentre in 25 anni il legno cede fino a 500g\/hl di tannino e lignina. Attraverso i pori di legno evapora ogni anno il 2-4 % del distillato (chiamata la parte degli angeli, pari a circa 20-25 milioni di bottiglie!)<\/p>\n<p style=\"text-align: justify;\">La cantina (chai) \u00e8 fondamentale per l&#8217;adeguata evoluzione del distillato in botte perch\u00e9 se l&#8217;ambiente \u00e8 secco evapora pi\u00f9 acqua che alcol ed il Cognac diventa asciutto e duro, mentre se \u00e8 troppo umido evapora l&#8217;alcol ed il Cognac diventa debole e fiacco. Sulle pareti grigio scuro c&#8217;\u00e8 una muffa, la Torula coniacensis il cui sviluppo \u00e8 favorito dai vapori alcolici e dal nitrato di potassio delle strutture murarie.<\/p>\n<p style=\"text-align: justify;\">In base all&#8217;origine del distillato, alla temperatura ed all&#8217;umidit\u00e0, l&#8217;invecchiamento pu\u00f2 arrivare fino a 60 anni. I Cognac stravecchi sono travasati in damigiane (bonbonne) e messi in locali (paradis). A questo punto il Maestro di Cantina giudica la qualit\u00e0 e l&#8217;evoluzione dei distillati e stabilisce il momento giusto dell&#8217;assemblaggio di decine di acquaviti ricreando lo stile della maison.<\/p>\n<p><script async=\"\" src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block; text-align: center;\" data-ad-layout=\"in-article\" data-ad-format=\"fluid\" data-ad-client=\"ca-pub-2294603368235139\" data-ad-slot=\"6703038172\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h3 style=\"text-align: center;\">Cognac: Classificazione<\/h3>\n<p style=\"text-align: justify;\">La classificazione del Cognac si basa sull&#8217;invecchiamento. Il Blend di 2 Cognac, provenienti rispettivamente dalle Petite e dalla grande Champagne (&gt; 50 %), crea un Fine Champagne.
