Sono inseriti su un piccolo ramo chiamato raspo o rachide che rappresenta il 3-5% del loro peso. Ricco di lignina e cellulosa, il raspo contiene molta acqua, resine e pectine, ma soprattutto tannini e polifenoli. I tannini contenuti nel raspo per\u00f2 sono delle molecole corte e semplici, poco polimerizzate, che darebbero al vino un carattere troppo duro ed aggressivo oltre ad un forte senso di astringenza. Gli elementi meno importanti sono i vinaccioli, piccoli semi che rappresentano circa il 5% del peso, ricchi di sostanze legnose e grasse. Hanno tannini poco polemirizzati simili a quelli del raspo, responsabili di un&#8217;eccessiva astringenza. La buccia rappresenta il 10-15% del peso ma la sua composizione \u00e8 importante quanto quella della polpa. Contiene acqua, pectine, cellulosa, sostanze aromatiche e polifenoli (decisivi per colore e caratteristiche tattili e gustative del vino). Gli zuccheri sono i componenti pi\u00f9 abbondanti della polpa dell&#8217;acino, soprattutto glucosio e fruttosio (15-30 %) variabile in funzione dell&#8217;andamento climatico stagionale e del grado di maturazione delle uve. Nelle zone a clima freddo le uve sono in genere meno ricche di zuccheri rispetto a quelle di clima caldo che sono aiutate dalla luce del sole che favorisce la fotosintesi clorofilliana. Conoscendo la % di zuccheri del mosto si pu\u00f2 calcolare il titolo alcolometrico del vino, poich\u00e9 da 1g di zucchero si ottengono 0.6 ml di alcol etilico. L&#8217;acido tartarico \u00e8 il pi\u00f9 abbondante, ha un carattere deciso ma meno aggressivo del malico presente soprattutto nelle uve coltivate nelle zone fredde o raccolte non completamente mature. Dopo la fermentazione alcolica, questo acido pu\u00f2 essere il substrato della fermentazione malolattica che, grazie alla produzione di acido lattico, ne riduce la quantit\u00e0 e ne smorza l&#8217;effetto aumentando la piacevolezza della sensazione acida.
