Per evitare il contatto con l&#8217;aria e conseguenti problemi di ossidazione e imbruttimento, si impiegano riempitivi dotate di accessori che prima della tappata insufflano gas inerti insapori ed inodori come l&#8217;azoto.<\/p>\n<p style=\"text-align: justify;\">La capacit\u00e0 pi\u00f9 consueta delle bottiglie in commercio \u00e8 di 0.750 l, mentre per i passiti, a causa delle loro limitate produzioni, si usano quelle da 0.375 e 0.500 l. Nonostante la malattia del tappo,\u00a0il suo fascino resiste alla sua antieconomicit\u00e0 ed alle innovazioni.<\/p>\n<p>[\/et_pb_blurb][\/et_pb_column][\/et_pb_row][et_pb_row admin_label=&#8221;row&#8221;][et_pb_column type=&#8221;4_4&#8243;][et_pb_text admin_label=&#8221;tappo di sughero&#8221; background_layout=&#8221;dark&#8221; text_orientation=&#8221;center&#8221;]<\/p>\n<h1 style=\"text-align: center;\">Il Tappo di Sughero<\/h1>\n<p><span style=\"color: #9dc6d8;\">.<\/span><\/p>\n<p style=\"text-align: justify;\">Il tappo ha un ruolo fondamentale nell&#8217;evoluzione di un vino pregiato ed il sughero \u00e8 il materiale che garantisce un lungo affinamento in bottiglia. Gli scambi con l&#8217;esterno sono quasi impercettibili (ambiente RIDUTTIVO) anche se comportano variazioni nel colore, sempre pi\u00f9 pacato, nei profumi, sempre pi\u00f9 complessi e nel sapore, sempre pi\u00f9 rotondo.<\/p>\n<p style=\"text-align: justify;\">Il sughero utilizzato \u00e8 quello della <strong><em>Quercus suber<\/em><\/strong>, la quercia del sughero, che cresce bene in Portogallo, nel sud-ovest della Spagna, in Sardegna ed in Corsica. La corteccia, in media, viene tolta ogni 9-10 anni, tempo necessario affinch\u00e9 si formi lo strato di cellule morte del tessuto legnoso della pianta. Lasciata stagionare all&#8217;aria per 8-10 mesi, poi bollita per 1- 1h 30&#8242;, raschiata e rifilata, disinfettata e selezionata in base alla qualit\u00e0, la corteccia \u00e8 ridotta in fogli, sottoposta ad una seconda bollitura e stoccata per qualche giorno in ambienti ben ventilati. I fogli sono poi tagliati in strisce larghe quanto il futuro tappo, in senso trasversale rispetto alla direzione di crescita del tronco. Le strisce sono trattate e sbiancate con acqua ossigenata o soluzioni di cloro e poi tagliate nella forma richiesta. Alla fine, per facilitare lo scivolamento del tappo nel collo della bottiglia, la superficie \u00e8 trattata con cera o paraffina.<\/p>\n<p style=\"text-align: justify;\">Il sughero \u00e8 un materiale inodore ed insapore, perfettamente impermeabile all&#8217;aria ed all&#8217;acqua. La sua capacit\u00e0 di aderire perfettamente al collo della bottiglia viene dalla <strong><em>suberina<\/em><\/strong>, una componente molto elastica delle cellule del sughero. Le caratteristiche sulle quali si valuta la qualit\u00e0 di un tappo di sughero sono la leggerezza, l&#8217;impermeabilit\u00e0, l&#8217;elasticit\u00e0, la coibenza o termostabilit\u00e0 e l&#8217;inerzia chimica.<\/p>\n<p style=\"text-align: justify;\">Il sughero pu\u00f2 causare al vino lo sgradevole <em><strong>odore e sapore di tappo<\/strong><\/em>, che pu\u00f2 essere causato da microrganismi e muffe, soprattutto Cladosporium e Armillaria mellea. L&#8217;odore sgradevole \u00e8 dovuto ad una sostanza chimica (tricloroanisolo) che si forma per interazione tra un fenolo del sughero ed il cloro impiegato durante le fasi di sbiancatura.
