Here in Lombardy, the second Lockdown has begun for exactly one week. Just like during the first quarantine, my favorite activities are cooking, eating and drinking. This is why today I want to talk to you about a product that I love: the honey. In particular I want to tell you about the one produced by Tenuta Casa del Sole because it was able to impress me not only for its taste, but also for its packaging.

Exactly as happens in the wine with the label, we buy with the eyes even before the mouth. The first thing that strikes us is the presentation of the product and therefore a company that takes care of this aspect is a winner for me. Not only because it suggests that I choose it from the shelf, but because it transforms itself into an excellent gift when I go to dinner with friends. By the way, how much I miss dinners - good ones like this one based on raw fish and Champagne - together! This morning while I was doing the umpteenth tour of the condominium driveway - by now I am walking around in circles that my old hamster shunned - I was on the phone with my mother and we were wondering if we would be able to do Christmas together and above all if my husband Francesco and I could go to her. find since in fact he and I are not first degree relatives.

I'll be honest, the bureaucratese gives me goosebumps. The proposal to have Christmas only with first degree relatives seems to me quite ridiculous: if parents have two children, they must choose which child to stay with since the brothers are second degree relatives? Then, if in the cauldron we end up relatives and relatives of the first degree, my mom and I can be together, my husband and my mom can be together ... and my husband and I who are a status apart how do we work? I already have goosebumps thinking about the discussions that will arise in the previous days ... not to mention if they stop you in case of control! 😅 When in doubt I decided to gear up as I did at Easter 2020 by choosing some online Christmas gifts to send to my mom, my aunt and my cousin in case we can't see each other ... obviously they are gastronomic boxes because we are all gluttons!

For years I have had a great passion for honey, so much so that I also did a honey taster course. This delicious food has always been appreciated, since prehistoric men who collected wild honey also for its great nutritional power. In medieval courts, Frederick II of Swabia organized incredible banquets by sprinkling the doves he himself hunted with honey. Tenuta Casa del Sole: the Scrigno Valli

Even before talking to you about this company I want to tell you why I chose this as my first Christmas gift for you to discover. Tenuta Casa del Sole: the perfect wedding favor

You probably know that I got married just over 2 months ago. My husband Francesco and I immediately agreed on the fact of divide the favor into 2 parts: one thing that remains for our guests and a solidarity part. For the solidarity part we made a donation toOncology Institute of Romagna who looked after my dad with great care during his last year of life. For the part that remained for our guests we chose a useful thing: that is a corkscrew engraved with our names, place and date of our wedding. But if we had made a different choice we would have opted for one gastronomic favor: a bottle of wine, a bottle ofoil or a jar of honey they were our alternatives. Here, if you like the idea of ​​honey as a wedding favor, the jars of Tenuta Casa del Sole are truly wonderful. And for a wedding or an important event, even the eye wants its part!

The most extraordinary thing is that this honey is not only beautiful, it is also good! I had the opportunity to taste all three flavors and choosing one is not easy ... I would probably make them mixed! Maybe, and I stress maybe, I choose linden honey, but it is a tough struggle with wildflower honey. Of all the taste that I like least is acacia, but if it is a gift, do not exist to take it because not only is it a great classic, but it is one of the best acacia honey I've ever eaten.

Tenuta Casa del Sole: a truly unique linden honey

The first time I spoke to Fabio I was struck by his humility: he did not tell me how good Tenuta Casa del Sole's honey was. I confess to you: when I got home I thought it was more packaging than substance and I was rather skeptical of the cost of the jar: 12 € for 140g of honey. Assuming that the box is really nice, it is useless to tell us: 1 kg of excellent quality honey costs an average of € 20. To be honest, this one from Tenuta Casa del Sole seemed very expensive to me. Then I "touched it" and tasted it. I concluded that I would spend 12 € for that small jar of linden honey from Tenuta Casa del Sole with my eyes closed because it is really special. It has a dense texture that “melts in your mouth”, a mentholated and resinous scent that is impossible to resist. The "crystallized" consistency makes it pleasant even for those who do not like the viscous consistency of honey.

Of course, given the price for me this is not honey to use as a sweetener instead of sugar. This honey is a little moment of pleasure, a small accessible luxury that we give to ourselves or to loved ones to enjoy with all our senses while we savor it alone or in combination to a fillet of marinated trout or to a agone in oil. We also tried it with the malga cheese, the hard and semi-fat yellow cheese that they sell in our country and it is to die for. A heavenly match! But trust me, with marinated fish it's really crazy! Tenuta Casa del Sole: not a job, a dream.

4 Emilian women - Benedetta, Fulvia, Alice, Mabel - each with a specific task, came together to create a truly special company. In the 161 hectares of the estate they plant trees, recover paths and free animals typical of the area. A perfect place to produce excellent honey and to rebuild an ancient village to make it the seat of agricultural activity, a place of work and sharing.

I went to live on an island in the middle of the lake where no cars drive because I love nature more than anything else. I firmly believe that Beauty will save us, but not that ephemeral and superficial beauty made up of aesthetic devices. I'm talking about true beauty, the one that gives us every day a flower that is born and gives us its colors. This is why my favorite product for sale on the company's shop is i surprise seeds of their centenary meadows, enclosed in an alcantara bag handmade by a local artisan. They cost only € 2,50 and you can buy them and plant them wherever you want.

quality honey: a little reflection of mine

Every day, every hour, every moment we make choices. As a grown woman I will never stop thanking my father and mother for teaching me the value of quality. Maybe my father has been the Quality Manager for most of his life and I have heard about UNI EN ISO 9001 before it was even thought of. Maybe my mother with her first salary at 19 bought herself a pair of jeans handmade in Italy. Maybe because we are what we eat, and at my house they never spent money on cigarettes to save on extra virgin olive oil.

Before looking at how much something costs, ask yourself if it is industrial, cheap or artisanal. If you are paying for the brand or the content. If you are raping nature or doing good to the planet and your body. And then remember that those who work in agriculture and know how to wait and respect their course, have a difficult and uncertain job. Climate change jeopardizes flowering, bee health and consequently the harvest.

Do you know what industrial honey is? The Italian law (sigh ...) transposes the European directive (... sob!) And establishes that honey that has an abnormal taste and odor - due to overheating - and / or having started a fermentation process - read has gone bad - and it is no longer suitable for direct consumption but can be an ingredient for the production of a new food, for example the honey biscuits of the famous brand ... this is however not to be confused with cheap honey which is what you find in the supermarket in liquid form and which has been pasteurized - losing all its nutritional properties - to make it crystallize as late as possible. Sometimes (argh!) On the label of the honey you buy on the shelf - and unfortunately I'm sure you don't read - it says "blend obtained from honeys from various European and non-European countries "and - if you feel really bad - "industrial honey intended solely for the production of cooked foods". The serious thing is that not only is everything possible, it is perfectly legal! And the sad thing is that the vast majority of consumers are unaware of it. Then he opens his jar suitable only for the production of cooked foods - read raw, it is no longer edible - and he sweetens the tea or spreads it on the rusks to the child as a snack.

Okay enough now that I do not want to make controversy in an article where we talk about quality and excellence. Maybe I'm savoring spoon by spoonful of the crystals that melt in my mouth of this linden honey from Tenuta Casa del Sole that makes me mange to think about the gastronomic ignorance that pervades the world.

The last Tenuta Casa del Sole product you should know about is their flours. I am a great lover of flour because I make practically everything at home: bread, pasta, biscuits, pizza ... and obviously the Romagna piadina (for the recipe click HERE)! But the recipe with which you can indulge yourself the most is that of honey crepes (especially with wholemeal flour):

  • 500g of whole milk
  • 250g of wholemeal flour
  • 3 eggs
  • 1 large spoonful of honey

With a mixer you get a homogeneous mixture. Filter it through a colander and let it rest in the refrigerator for 10 minutes. Put a non-stick pan to heat and when ready pour some dough, roll it out with the special tool - I suggest you buy the pancake maker like mine from Ballarini, here is the link on Amazon - and cook for 1 minute per side. Spread a spoonful of honey, close it, and then move it into the pan with the spatula until it caramelizes.

With this dose you can prepare at least 6 crepes, to be seasoned with all the flavors of Tenuta Casa del Sole honey and their flaked parmesan from Prati Centenari.
